Herbed Chickpea Patties

cup(s) fresh cilantro leaves |

cup(s) fresh parsley |

clove(s) garlic, peeled |

can(s) (15 oz each) chickpeas, rinsed & drained |
| 3/4 |
tsp ground cumin |
| 3/8 |
tsp salt |
| 3/8 |
tsp ground black pepper |
| 4 1/2 |
Tbsp olive oil |

Instructions:
1. Place the cilantro, parsley, and garlic in a food processor and process, scraping down the sides of the bowl, until finely ground. Add the chickpeas, cumin, salt and pepper and process until the mixture forms a coarse purée. Shape the mixture into 3-inch patties.
2. Heat half the olive oil in a nonstick skillet over medium heat. Add the patties and cook until golden brown on the bottom, about 5 minutes. Carefully turn patties and add remaining oil around edge of pan. Continue to cook until golden brown, about 4 minutes. Transfer patties to paper towel lined plate. Serve. |
