Herbed Chickpea Patties

3/4 cup(s) fresh cilantro leaves
3/4 cup(s) fresh parsley  
1 1/2 clove(s) garlic, peeled
3 can(s) (15 oz each) chickpeas, rinsed & drained
3/4 tsp ground cumin
3/8 tsp salt
3/8 tsp ground black pepper
4 1/2 Tbsp olive oil

Herbed Chickpea Patties

Instructions:

1. Place the cilantro, parsley, and garlic in a food processor and process, scraping down the sides of the bowl, until finely ground. Add the chickpeas, cumin, salt and pepper and process until the mixture forms a coarse purée. Shape the mixture into 3-inch patties.

2. Heat half the olive oil in a nonstick skillet over medium heat. Add the patties and cook until golden brown on the bottom, about 5 minutes. Carefully turn patties and add remaining oil around edge of pan. Continue to cook until golden brown, about 4 minutes. Transfer patties to paper towel lined plate. Serve.
